This book, like my cooking, was born out of a desire to share. To share what we have learned over the years. To share the creative processes and show the effort behind each dish. To share the ingredients and flavors that excite me. Share the experiences that we cooks have. To share ideas so that they can be used and appropriated. That is when this book will make sense, when it will come to life.
